- 4 Bell Peppers Large
- 4-6 Boudin Links
- 1 cup Four cheese blend shredded
- 8 oz Can Rotel with Green Chilies
- Wash, top, and clean peppers.
- Sprinkle a little cheese in the bottom of each pepper.
- Fill each pepper with Fresh Boudin (removed from the casing) and top with a spoon full of Rotel.
- Place a generous portion of cheese on top of each one.
- Cover with foil and place in oven at 350° F for 45-50 minutes.
