  1. Wash, top, and clean peppers.
  2. Sprinkle a little cheese in the bottom of each pepper.
  3. Fill each pepper with Fresh Boudin (removed from the casing) and top with a spoon full of Rotel.
  4. Place a generous portion of cheese on top of each one.
  5. Cover with foil and place in oven at 350° F for 45-50 minutes.
