Cajun twist on an Italian favorite.

Ingredients
  • 1/2 cup Red bell pepper Sliced
  • 1/4 cup Green pepper Sliced
  • 1/2 cup Yellow onion Sliced
  • 2 tbsp olive oil
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1/4 cup Fresh grated parmesan cheese
  • 1 pound Cooked pasta Penne or spiral pasta works the best
  • Sauce Ingredients
  • 2 Large Red Bell Peppers Diced
  • 1/4 cup Onions Diced
  • 2 cloves garlic
  • 3 Tomatoes Large, Diced
  • 2 tbsp Sugar
  • 1 tbsp Kosher salt
  • 2 tsp Red Pepper Flakes
  • 1 tbsp Ground Pepper
  • 1 tbsp Fresh basil Chopped
  • 2 tbsp olive oil

Instructions
  1. In a large non-stick skillet, cook the veggies in olive oil over high heat for 5-7 minutes or until they become soft and tender.
  2. Remove from the heat and place the veggies in a blender with the remaining ingredients and blend until smooth.
  3. Taste the sauce and if it needs any salt or sugar, add a little more to your liking. Set the sauce aside.
  4. In a large non-stick skillet, cook the veggies and sausage in olive oil over high heat for 5-7 minutes or until the veggies become soft and tender. Season them with salt and pepper and add the pasta.
  5. Remove from the heat and add the sauce.
  6. Mix everything together very well.
  7. Place a healthy portion of the finished pasta on a plate and garnish with fresh chopped green onion. Gently grate the parmesan cheese on top and enjoy!
