- 1/2 cup Red bell pepper Sliced
- 1/4 cup Green pepper Sliced
- 1/2 cup Yellow onion Sliced
- 2 tbsp olive oil
- 1 tsp Salt
- 1 tsp Black Pepper
- 1/4 cup Fresh grated parmesan cheese
- 1 pound Cooked pasta Penne or spiral pasta works the best
- Sauce Ingredients
- 2 Large Red Bell Peppers Diced
- 1/4 cup Onions Diced
- 2 cloves garlic
- 3 Tomatoes Large, Diced
- 2 tbsp Sugar
- 1 tbsp Kosher salt
- 2 tsp Red Pepper Flakes
- 1 tbsp Ground Pepper
- 1 tbsp Fresh basil Chopped
- 2 tbsp olive oil

Instructions
- In a large non-stick skillet, cook the veggies in olive oil over high heat for 5-7 minutes or until they become soft and tender.
- Remove from the heat and place the veggies in a blender with the remaining ingredients and blend until smooth.
- Taste the sauce and if it needs any salt or sugar, add a little more to your liking. Set the sauce aside.
- In a large non-stick skillet, cook the veggies and sausage in olive oil over high heat for 5-7 minutes or until the veggies become soft and tender. Season them with salt and pepper and add the pasta.
- Remove from the heat and add the sauce.
- Mix everything together very well.
- Place a healthy portion of the finished pasta on a plate and garnish with fresh chopped green onion. Gently grate the parmesan cheese on top and enjoy!
