In a large non-stick skillet, cook the veggies in olive oil over high heat for 5-7 minutes or until they become soft and tender.
Remove from the heat and place the veggies in a blender with the remaining ingredients and blend until smooth.
Taste the sauce and if it needs any salt or sugar, add a little more to your liking. Set the sauce aside.
In a large non-stick skillet, cook the veggies and sausage in olive oil over high heat for 5-7 minutes or until the veggies become soft and tender. Season them with salt and pepper and add the pasta.
Remove from the heat and add the sauce.
Mix everything together very well.
Place a healthy portion of the finished pasta on a plate and garnish with fresh chopped green onion. Gently grate the parmesan cheese on top and enjoy!
