  • 1 lb Smoked Boudin
  • 2 Eggs
  • 1 Package of Crackers Use as needed for consistency
  • 1/4 tsp Salt
  • 1 tsp Pepper
  • 1/2 tsp Cayenne Pepper
  • Cooking Oil

  • 1 tsp Pepper

Instructions
  1. First, remove boudin from casing and form boudin into balls.
  2. Dip into beaten eggs, then into crumbled crackers.
  3. Deep-fry boudin balls in cooking oil at 325° F or until lightly browned.
  4. Drain boudin balls on paper towel, then serve.
