Ingredients
- 1 lb Pure pork sausage Sliced 1/4 in. thick
- 8 oz Can whole tomatoes
- 4 oz Can mushroom stem and pieces
- 1 cup Chopped celery
- 1 cup Chopped onion
- 1 Bell Pepper Chopped
- 1 clove garlic
- 1 tsp Cooking Oil
- 1 cup uncooked rice washed
- Salt & Pepper Add according to taste

Instructions
- Put cooking oil in a heavy pot (3 qts).
- Add pork sausage and cook 10 minutes, drain excess oil, add onions, celery, garlic, bell pepper, whole tomatoes and juice, mushrooms and juice.
- Bring to a boil, season to taste with salt and pepper, add rice, mix well.
- Lower fire to simmer, put lid on pot and cook 45 minutes.
