Ingredients
- 2 tbsp Vegetable oil
- 1 Medium Sized Onion chopped
- 4 oz chopped green chilies drained (can)
- 3/4 cup Mahatma rice uncooked
- 1 cup water
- 1 Beef-flavored bouillon cube
- 16 oz Bush’s Best light red kidney beans or Bush’s Best red beans
- 1/2 cup shredded Monterrey jack cheese 2 oz.
- 1 lb Smoked Jalapeno Cheese Sausage
- 1 tsp Tabasco brand pepper sauce

Instructions
- In medium saucepan, heat oil over medium high heat; add onion and chilies and saute 3 minutes.
- Add rice, water and bouillon cube.
- Bring to a boil. reduce heat, simmer covered, 15-20 minutes until rice is tender.
- Stir in beans, cheese, Smoked Jalapeno Cheese Sausage and Tabasco. Cook another 10-15 minutes.
